No Bake Pumpkin Cheesecake
Our Residents and their families will be enjoying this recipe at our Family Thanksgiving event in November.
Ingredients and Directions for Crust
1 and ½ cups of graham cracker crumbs
1/3 Cup of sugar
7 Tablespoons of butter melted
1 and ½ teaspoon of cinnamon.
Combine all above ingredients in bowl until well mixed. Take graham cracker blend and press into a GREASED pie pan until bottom and sides of pan are evenly covered.
Place crust in the freezer for 20 minutes to set.
Ingredients and Directions for Filling
8 oz package of cream cheese (softened)
1 cup of pumpkin puree
1 8oz tub of whip cream THAWED
½ Cup brown sugar
½ teaspoon of pumpkin pie spice
Using a mixer, combine cream cheese and pumpkin puree until smooth. Add it brown sugar and pumpkin pie spice and blend until smooth. Gently fold in the whipped cream.
Pour mixture into set pie crust and smooth the top with a spatula. ALLOW CHEESECAKE TO SET 24 HOURS IN FRIDGE BEFORE CUTTING.

Whipped Cream, Caramel Sauce, Pecans
