Pierogi Casserole

What you will need…
1 box lasagna noodles
Cheddar cheese (16oz package)
Bacon (12 oz package)
Onions 2 medium sized
Butter 1 stick plus ¼ stick for onions
Potatoes 10-12 pending size
Milk
Sour cream
9 by 13 pan (glass casserole dish preferred)

Pierogi Casserole

1. Cook noodles until al dente. Set aside.
2. Cook bacon. Chop up when cooled enough. Set aside.
3.Peel and dice onions. Sautee with ¼ stick butter until onions are soft. Set aside.
4. Peel and boil potatoes until tender. Drain. Mash potatoes with full stick of butter and milk (add a splash at a time until you have smooth creamy mashed potatoes)
5. Spray pan with cooking oil.
6. Place first layer of lasagna noodles on pan, spread almost ½ of mashed potatoes on noodles. Sprinkle 1/3 of cheese until potatoes are lightly covered. Sprinkle 1/3 of onions and bacon on top of cheese.
7. Repeat step 6 for another layer.
8. For the top layer spread remaining mashed potatoes lightly over noodles. Cover noodles and potatoes with cheese. Top with remaining bacon and onions. Sprinkle parsley (optional) for color.
9. Cover pan with seran wrap and foil. Cook for 25 minutes. Take off wrap and foil and cook for another 5 minutes to lightly brown top.
10. Serve with sour cream on side.
